This module lays the foundation by exploring why food waste matters: globally, environmentally, socially, and economically. We unpack common misconceptions around food waste and its true impact across the food value chain.
You’ll be introduced to LightBlue’s suite of food waste solutions, including:
• The PLEDGE on Food Waste: a third-party certification system
• FIT Food Waste Tech: our real-time food waste monitoring system
This module offers an in-depth exploration of The PLEDGE on Food Waste’s 7 pillars and 95 criteria. Participants will review each criterion with practical examples of required evidence, understand auditor expectations, and gain insights into how to implement impactful operational changes.
The module equips hospitality teams with the tools and skills to effectively reduce food waste and monitor performance. You will learn how to set up and implement the FIT system in your kitchens, establish a baseline and reduction goals, and conduct food waste audits. Training includes awareness-raising on the impact and costs of food waste, hands-on system setup, proper segregation and data collection practices, and ongoing performance reviews.

This module introduces LightBlue’s suite of online learning courses focused on food waste prevention, sales mastery, and behavior change strategies.
Participants will also be equipped with the Consultant’s Toolbox, a collection of essential resources, templates, and support materials to confidently approach leads, conduct training, and drive project success.

Course curriculum
We will cover the following essential aspects: philosophy of the system, its structure, beneficiaries, online compliance platform, and guidelines.
Detailed review of the 95 criteria articulated around 7 key pillars. Examples of evidence will be shown during the session, as well as indications of how to implement effective changes in the restaurant’s operations.
We will breakdown this module in 3 sub-parts:
a) How do you train your customers, reviewing how to prepare and run the kick-off workshop (info needed, location, material, participants), what material you should use, how do you execute and what should be the expected outcome.
b) How to guide them during the journey, in particular the “mid-term compliance check” (to assess advancement, advising and setting the deadline for project), the final mock-audit, and what tool you should use for each step.
c) How to communicate, to learn how to work with the MarCom team (and culinary team, BEFORE and AFTER the audit results are out (review of the toolbox, of existing touchpoints, and design of the Action Plan).
