A cornerstone of the project’s success was the delivery of specialized online and on-site training sessions in both Thai and English. Lightblue targeted over 200 key stakeholders, including guest star chefs, the host culinary team at Capella Bangkok, and stewards. These sessions covered the technical requirements of the Zero Food Waste standard, detailing specific waste flows and individual roles. This educational approach ensured a strict separation between organic and non-organic waste, effectively turning a high-pressure kitchen environment into a center for food waste prevention and behavioral change.

Strategic Planning and Surplus Management

Lightblue’s intervention began months before the ceremony with comprehensive menu engineering. Working alongside 8 Michelin-starred chefs, the team anticipated ways to repurpose unutilized ingredients and minimize scraps at the source. By identifying Scholars of Sustenance (SOS) as the primary food rescue partner, Lightblue established clear protocols for donation and logistical timing. This meticulous planning ensured that 427 surplus meals were safely rescued and kept at the correct temperature for immediate redistribution to vulnerable communities, rather than being discarded.

On-Site Coordination and Impact Measurement

During the event, the Lightblue team managed the waste flow design, strategically placing recording stations that would not interrupt the flow of service. Beyond the back-of-house logistics, the team created communication touchpoints—such as "Zero Waste Dish" flags—to engage guests in the sustainability journey. Following the ceremony, Lightblue tracked critical KPIs to report the final environmental impact: 205 kg of food diverted from landfills and 513 kg of CO2 emissions avoided, providing the data-backed evidence required for world-first verification.
